U PECURINU - CORSICAN SHEEP’S CHEESE
All of the U Pecurinu chees are rich and tasty, like most of Corsica’s milk products. There’s just a hint of Corsican character that makes them so special. This one is a hard cheese, great for cutting thick and that I have used in my recipe (Pane, Pumata e Prissuutu). The soft version, orange in colour is one of the most spectacular cheeses I have ever tasted. Very refined, complex and powerful at the same time.
