This recipe is a mixture of two traditional recipes from the French Riviera. Scrambled eggs with truffle (traditional truffle dish) and poutine omlette (a local delicacy of new born fish in an omelette).
Make your scrambled eggs as you like them, I suggest not too cooked so that the egg is still a little runny. Add a little sea salt and black pepper to the eggs before cooking and add a very generous portion of grated truffle in the last moments of cooking, just enough time for the truffle to perfume the eggs.
Then place the poutine on top of the dish.
